Turtles, you know you love them. Now enjoy them without the lectins and sugar. Start by making my LFG caramel! It's easy, rich and buttery just like the caramel you love. Only this caramel is very, very low in sugar because it's made with Swerve and a smidge of honey.

The Recipe
Lectin Free Gourmet Turtles
1 Batch LFG Caramel
48 Whole Pecans
1/2 C Organic 72% Cacao Chunks
1 t Grass-fed French Butter
1 T Sweetened Condensed Goat Milk or Goat Milk
LFG Caramel
4 T Grassfed Cultured Butter
4 T Swerve Granules
2 T Raw Local Honey
1 t Pure Vanilla Extract
Step 1: Make the Caramel
In a small saucepan on medium high heat, combine the butter, Swerve and honey. Bring to a boil, stirring constantly. Boil for about 2-3 minutes until the mixture turns a dark caramel color. Remove from heat and add the vanilla. Let cool while you do steps 2.
Step 2: Arrange the Pecans
On a parchment paper, arrange the pecans into twelve clover shapes as pictured. Spoon about 1 scant tablespoon of caramel over each pecan clover.
Step 3: Melt the Chocolate
In a medium microwave bowl, melt chocolate chunks, butter and milk for about 1 minute. You can use the sweetened condensed milk you have leftover from the goat milk fudge or just use regular goat milk, or other compliant milk. Stir the melted mixture until smooth. Spoon about 1 tablespoon of melted chocolate over the caramel pecan clusters. Top each with a pinch of coarse sea salt. Allow to completely cool and set before serving.
