Egg dumplings is a typical Austrian dish and a wonderful example of simple comfort food done right. Ingredients (4 servings)

  • Prepared dumplings according to basic recipe

  • 6 large chicken eggs

  • 1½ cups sliced onions

  • 2–3 tablespoons ghee

  • Salt, to taste

  • Black pepper, to taste

  • ¼ cup fresh herbs (e.g., chives, parsley), finely chopped


Preparation

  1. Prepare the dumplings according to the basic dumpling recipe

  2. Whisk the eggs in a bowl. Peel the onions and slice them thinly.

  3. Melt ghee in a pan and sauté the onions gently until soft and lightly golden.

  4. Add the cooked dumplings to the pan, then pour in the eggs. Cook over medium heat, stirring occasionally, until the eggs are just set.

  5. Wash and finely chop the herbs.

  6. Season with salt and pepper and garnish with fresh herbs before serving.
