Banana bread like mom used to make is within reach. This perfectly moist, bouncy, slightly sweet bread delivers big banana taste. And you get added benefits from hazelnut flour, green bananas, and walnuts that you can't get from that old sugary bread.


Just throw all the ingredients into a blender or food processor and bake. It's that easy. And you won't believe the taste and texture. Since green bananas don't taste much like bananas, I use real banana extract to get the big banana flavor in the first bite.

The Recipe


LFG Green Banana Walnut Bread

3 Green Bananas

2 Pastured Eggs

1/4 C Green Banana Flour

1/4 C Hazelnut Flour

1/4 C Extra Virgin Olive Oil

3 T Erythritol Granules

1 T Organic Full-fat Sour Cream

1 t Pure Banana Extract

1/2 t Baking Soda

1/2 t Baking Powder

1/4 C Walnut Halves

1 Additional Green Banana (for tops)


Instructions:


Step 1: Blend Ingredients

Preheat oven to 325 degrees F. Prepare two small loaf pans by lining them with parchment paper. In a blender or food processor, blend green bananas, eggs, flours, oil, erythritol, sour cream, banana extract, baking soda, and baking powder until smooth and creamy.


Step 2: Bake Bread

Pour batter into prepared small bread loaf pans. Divide walnut halves and push into the tops of the bread batter. Slice the additional green banana the long way in half. Set each banana slice, cut side up, on top of each loaf. Bake for 45 minutes until loaves are risen and tops are rich brown.


Slice this bread and serve warm with pastured butter. Pairs great with coffee.

Mini loaf pans come in different sizes. Which size did you use.

I have 5 3/4 x 3 x 2 1/8, but you don’t have to go out and buy that exact size. You could use one large loaf pan, or even muffin tins. Just adjust the bake time up or down For larger or smaller vessels.
