Crispy Broccoli Bake

Easy 10-minute baked broccoli has a crispy, garlicky, cheesy, buttery, lectin free "bread crumb" topping made from LoveBird cassava cereal. Make it tonight.

Believe it or not, my kids love broccoli. They especially love broccoli when smother it with crispy, cheesy, buttery bread crumbs. Take those away, and it's just plain old broccoli. The Lectin Free Gourmet has a few tricks up her sleeve when it comes to making the perfect crispy oven-baked broccoli.


First, the oven has to be at at least 500 degrees for a quick sear on the outside, while still keeping the broccoli tender crisp. A fast bake helps maintain the pretty green color, too. If you bake broccoli slow and low, it tends to lose its vibrancy.


Second, baked broccoli is just better when it's covered in crispy, garlicky, cheesy, buttery bread crumbs. Here's when you say, "But, Kristine, bread crumbs aren't part of the lectin free plan."


"The hell they aren't," I say. You know I have my ways.


For the crispiest, crunchiest, quickest lectin free bread crumbs, I use unsweetened LoveBird cassava cereal. The ingredients are 100% Plant Paradox friendly. Not only is it a great cold cereal when you hanker for a bowl of breakfast O's doused in ice-cold a2 milk, but I've found that this cereal makes terrific bread crumbs for any recipe that calls for them.


Now when you begin to think of all the recipes that call for bread crumbs, your mind starts to wander. You may have even tried making some with almond flour, but they're just not the same. Am I right? Then suddenly, in swoops LoveBird cereal crumbs to save the day.


Recipes with bread crumbs might include meat loaf, meat balls, and breaded meats like schnitzel, breaded fish and chicken parmesan. Believe me, I've made them all with this new cereal crumb, and they're spectacularly just like the real thing. So let's get on with it, shall we?

 

The Recipe


LFG Crispy Broccoli Bake

14 oz Fresh Broccoli Florets

3 Tbsp Olive Oil

1 Tbsp Lemon Juice

1/4 tsp Course Salt

1/4 tsp Course Pepper


Crispy Bread Crumb Topping

1/2 Cup LoveBird Unsweetened Cereal (crushed into crumbs)

1/2 Cup Finely Grated Parmigiano-Reggiano

2 Cloves Garlic (minced)

1/4 Cup Grassfed Ghee (melted)


Instructions:

Step 1: Roast Broccoli

Preheat oven to 500 degrees F. In a large bowl, add broccoli florets, olive oil, lemon juice, salt, and pepper. Toss until broccoli is well-dressed in oil and lemon juice and seasoning is evenly distributed. Place dressed broccoli in a casserole dish. Bake for 5 minutes on middle rack.


Step 2: Mix Crispy Bread Crumb Topping

While broccoli is baking, mix the bread crumb topping. In a small bowl, add crushed cereal, grated cheese, minced garlic, and melted ghee. Mix with a fork until ingredients are well incorporated.


Step 3: Bake the Topping

After the broccoli has baked on high heat for 5 minutes, remove from oven. Dump the bread crumb mixture on top of the broccoli. Place the casserole back into the 500 degree oven for an additional 5 minutes until topping browns and crisps.


Serve this easy LFG crispy broccoli bake as a tasty side dish or as a light meal.
