Açaí Bowl

Updated: Aug 6, 2023

Make frozen acai bowls without all the sugar, grain-ola, and harmful lectins.

Açaí bowls are always trending. You've probably seen people enjoying these delicious frozen concoctions. Frozen açaí fruit purée serves as the base for more fresh tropical fruits and granola layered on top. Unfortunately most açaí bowls are not Plant Paradox compliant due to the sugary types of fruit like ripe bananas. Additionally, most granolas have oats, bad seeds and even more sugar. So, today's your lucky day. We're making Lectin Free Gourmet açaí bowls. Read on for the recipe.

This açaí bowl features Gundry-approved in-season fruits, Trader Joe's frozen açaí purée, and Lectin Free Gourmet granola. You can with bake a batch up yourself with my recipe on the blog, or buy it ready-to-eat from my online store. The granola is made with blanched almonds, green bananas, pecans, coconut and a maple cinnamon glaze baked right in.

To make it, simply follow the recipe here. To order Lectin Free Granola, click here.

For this recipe, you'll need a good blender that has a stick to insert through the lid to break up blade jams. Since we're using multiple frozen fruits, and very little water, jams will happen early in the blending process. The stick makes it so you don't have to pause to stir. I like the Blend Tek or the Vitamix for this job.

As stated before, the base for the bowl is açaí freezer packs from Trader Joe’s. Have you tried this one-ingredient frozen fruit purée yet? Game changer! It's just one ingredient, açaí. So we're also going to add a sweetener.

I also used a whole organic kiwi with the PEELS ON! Those hairy skins contain valuable polyphenols and extra fiber. Just make sure to buy organic or wash the skins really well.

Also in this bowl are cacao nibs for even more polyphenols, a green banana for resistant starch, and a few “heart” dots of plain coconut yogurt.

And yes, I added fresh edible violets for a fancy flair. They’re edible and deliciously fragrant.

Açaí bowls are refreshing in summer and a nice change-up from a traditional “break fast” of eggs and bacon!

Now, let's make açaí bowls!

The Recipe

(Makes one large serving)

LFG Açaí Bowl

1 Packet TJ's Frozen Açaí Purée

1/4 Cup Frozen Black Cherries

1/4 Cup Frozen Blueberries

1/2 Frozen Green Banana

1 Lime (juiced)

1 tsp Raw Local Honey

6-8 Drops Monk Fruit or Stevia Extract

1/4 Cup Water

1/4 Cup LFG Granola

1 Kiwi

1 Tablespoon Cacao Nibs

Plain Coconut Yogurt (garnish)

Edible Flowers (garnish)

Step1: Blend Acai Base

Into a good blender, add frozen açaí purée, cherries, blueberries, green banana, lime juice, honey and sweetener drops. Also, add 1/4 cup water at this time.

HOT TIP: Green bananas don't have much flavor. So, if you love a little banana flavor in your açaí bowl, I suggest adding a teaspoon of banana extract.

Step 2: Add Drop Ins

Scrape the puréed frozen fruit into a bowl. Arrange fresh kiwi, LFG granola, another green banana (optional), and cacao nibs. Garnish with dots of plain coconut yogurt and edible flowers. To make yogurt hearts, insert a toothpick at one side of the yogurt dot and drag is straight across to the opposite side of the dot.

ENJOY!
