Traditional Austrian comfort food meets modern lectin-free cooking. Classic Innviertler Bacon Dumplings are made with a simple noodle dough wrapped around a savory bacon filling. In this lectin-free version, our PASTA & NOODLES MIX replaces traditional flour entirely. Combined with fresh eggs, it creates a smooth, elastic dough that's easy to roll and shape while staying true to the authentic character of this Austrian favorite.

Whether served with sauerkraut, in a rich beef broth, or simply with melted butter, these dumplings are a delicious taste of Upper Austria.
Ingredients
For the Dough
250 g (9 oz) PASTA & NOODLES MIX
3 large organic eggs
For the Traditional Filling
300 g (10 oz) finely diced bacon (beef bacon or pork bacon)
2 tablespoons freshly chopped chives
Freshly ground black pepper
Optional Additions
1–2 tablespoons very finely chopped onion
Finely chopped parsley or other fresh herbs
Instead of bacon, use seasoned ground meat for a hearty meat-filled variation
Instructions
1. Prepare the Dough
Combine the PASTA & NOODLES MIX with the organic eggs and knead until a smooth, elastic dough forms. Cover tightly or place the dough in an airtight container.
For the best texture, prepare the dough one day in advance and refrigerate it overnight. The resting time allows the mix to fully hydrate, resulting in a dough that's smoother, more elastic, and easier to roll. Before shaping the dumplings, let the dough sit at room temperature for about 20–30 minutes.
2. Prepare the Filling (One Day Ahead)
Mix the finely diced beef bacon or pork bacon with the chopped chives and a generous amount of freshly ground black pepper. If desired, add finely chopped onion, parsley, or your favorite fresh herbs.
Shape the mixture into small, firm balls, about 1 inch (2.5 cm) in diameter. Arrange them on a parchment-lined tray so they don't touch and freeze them overnight.
Using frozen filling makes assembling the dumplings much easier. The filling stays compact while you wrap the dough around it, helping you create perfectly sealed dumplings without the filling falling apart or pushing through the dough.
3. Shape the Dumplings
Divide the dough into equal portions and flatten each piece into a thin round approximately ⅛ inch (3 mm) thick.
Place one frozen filling ball in the center of each dough round. Carefully wrap the dough around the filling, sealing the edges completely. Roll each dumpling gently between your hands until smooth.
4. Cook
Bring a large pot of salted water to a gentle simmer. The water should never reach a rolling boil.
Carefully lower the dumplings into the simmering water and cook for 10–12 minutes, or until the dough is tender and fully cooked. Remove with a slotted spoon and drain briefly before serving.
