Eating lectin free can be challenging. But one thing is for sure...we don't have to deprive yourself. Many mindful companies are creating perfectly al dente pastas made from lectin free ingredients like millet, sorghum and even green banana. This recipe is made with a lovely one-ingredient rotini manufactured by Pieno. The owner sent me a box and I must say, it's excellent. It boils up al dente in just four minutes. And the texture is firm, and chewy just like real Italian semolina pasta. The flavor is similar to traditional pasta. Nothing weird about it. The resistant starch in green bananas means low carb and high fiber. So, it's a win-win situation for your gut.
Now, you can pick up a box of this terrific pasta in certain stores like Kroger, Ralphs, Fred Meyer, or order it online here at Pieno Pasta | High Fiber Superfood Pasta made from Green Bananas (naturetoculture.us).
When you cook this up, you'll notice it is probably the fastest pasta in the West. In just four minutes, it's ready. In those four minutes, you can prepare the other ingredients including sweet onion, celery, and the secret sauce.
Here's a little secret about my pasta salad. I grate the onion! If you have a box grater, you can do this quickly and with ease. Grating the onion, rather than chopping, releases more sweet onion flavor into the dish. And the finely grated onion never gives you an overwhelming onion flavor like when you bite into a chunk of onion. You'll love the result of grating onion into your pasta salad so much, you'll never go back to chopping.
Okay, now let's talk about secret sauce. The creamiest most flavorful pasta salad dressing must have three things: mayonnaise, vinegar, and honey. Perhaps the mayo doesn't surprise you, but the vinegar and honey might. This secret sauce came from a chef I knew from Syracuse, New York who never made a pasta salad without these three ingredients. And he never met anyone who didn't love his pasta salad.
