Tuna Salad Spa Lunch

You know that tuna salad at the spa or country club — that "special" tuna salad that's loaded with goodies? Well that is the inspiration for this Lectin Free Gourmet recipe.

I love tuna! It's such a quick, easy and inexpensive way to get lots of nutrients like protein to build muscles, Omega-3 fatty acids for a healthy heart, B6 for a good night's sleep and antioxidants like vitamin C, zinc, selenium and manganese to boost your immune system.


In addition to the health benefits, tuna tastes amazing! Most of the mainstream brands have wild caught, dolphin safe albacore, which is what I like to use. So let's dive in!


Recipe


Tuna Salad Spa Lunch

1 2.5 oz Pouch Wild Caught Albacore Tuna

1-2 T Mayonnaise

1 t Chopped Onion

1 T Shredded Purple Cabbage

1 T Carrots Julienne

5 Romaine Lettuce Leaves

1 Pinch Salt

Cilantro Garnish

Instructions:

In a small mixing bowl, put tuna, mayo, onion, cabbage, carrots and salt and fold together until well incorporated. On a plate, make a bed out of your romaine leaves. Now place your tuna salad mixture in a nice baseball sized ball on top of your bed of lettuce. Top with a cilantro garnish.

Tuna is chock full of protein, Omega-3s and B6, plus it's rich in antioxidants.

The recipe is enough for one, but you can multiply it to serve more. This dish pairs great with a New Zealand sauvignon blanc or a tall glass of iced green tea.
