This is straight up, smokehouse barbecue sauce without the lectins and sugar. Sweet, tangy, smokey, with a kick of heat, this rich dark honey barbecue sauce is great on ribs, chicken, brisket, burgers, pizza, and oh yes, little smokies cocktail weenies for the big game.
I found pure liquid smoke from Living Nutrition. It is simply the captured smokey condensation from a wood chip smoker. Just pure liquid smoke, without the caramel color and preservatives of popular brand liquid smoke.
The Recipe
Lectin Free Gourmet BBQ Sauce
1 T Extra Virgin Olive Oil
2 Cloves Garlic finely minced
2 T Red Onion finely minced
1 C Pomi Strained Tomatoes
1/4 C Apple Cider Vinegar
3 T Brown Swerve
1 T Chipotle Tabasco
1 T Lemon Juice
1 T Raw Local Honey
1/2 T Ground Mustard
1 t Pure Liquid Smoke
1/2 t Salt
1/2 t Pepper
Instructions:
Step 1: Saute Onions and Garlic
In a small enameled Dutch oven, heat olive oil on medium low. Drop in minced onion and garlic.
Step 2: Mix in Remaining Ingredients
With a wire whisk in strained tomatoes, vinegar, Swerve, Tabasco, lemon juice, honey, mustard, liquid smoke, salt and pepper.
Step 3: Simmer
Turn the heat up just enough to bring the mixture to a boil. Then reduce heat to a simmer and cover for 15 minutes until the mixture is thick and brownish.
My Lectin Free Gourmet BBQ Sauce is wonderful on ribs and chicken. I also use it as the sauce on BBQ chicken pizza. And, I make slow cook grassfed beef cocktail wieners in it for game day. It's tastes like authentic smokey honey barbecue sauce like you get in real southern smokehouse.
