Green Banana Pancakes

My green banana blender pancakes are made with just two simple ingredients. and they provide enough protein and resistant starch to last all day. Your gut bugs will be fed, too!


Green bananas provide a prebiotic known as resistant starch. This important nutrient for gut health encourages the growth of good bacteria in the gut. If you have a leaky gut, this is how you fix it.


Green bananas can help improve your digestive and colon health because the resistant starch travels through and "resists" digestion there. By the time it reaches your lower intestines and colon, fermentation must take place to process the food. This fermentation activity by your gut bugs, makes for smooth digestion and a healthy colon.


Now, let's talk about what is and isn't a GREEN BANANA! Most of the bananas you see on the fruit stand are not green enough. A green banana is nearly impossible to peel. You have to cut into it to get the fruit inside. And the banana inside will snap in half if you try to bend That's because the ripening process hasn't yet begun. And the fruit inside is all starch. Green bananas don't taste at all sweet, or like bananas for that matter.


To get the greenest bananas, I go directly to my produce buy at my neighborhood grocer and ask his to select some from the newest arrivals from the produce dock in back. Cold storage prevents the onset of ripening and can assure you'll get the greenest banana. So be sure the green bananas you buy are very cold. Just ask and ye shall receive.

The Recipe


LFG Green Banana Blender Pancakes

1 Green Banana

2 Pastured Eggs


Blueberry Compote

1 C Frozen Wild Blueberries

1/4 C Lakanto Maple Flavored Syrup

Instructions:


Step 1: Blend Ingredients

In a good blender, add the green banana and eggs. Whip until the batter is very smooth and there are no lumps. I use a VitaMix, which is a professional grade blender used in many smoothie shops. It's great! If you need a new blender, consider this one. I have a link at the bottom for the VitaMix I have from Amazon.


Step 2: Cook the Pancakes

On a hot skillet, melt French butter in the spots you plan to pour batter. Pour about 1/4 cup of pancake batter into the buttered areas. Flip when the underside is browned and bubbles appear on top. Often I will add wild blueberries just after I pour the batter to add extra antioxidants and flavor.


Step 3: Make Blueberry Compote

In a medium saucepan, bring blueberries and syrup to a boil. Turn of heat and let cool before serving.


This recipe make about eight palm sized pancakes. You can easily multiply the recipe to feed a family.


Serve with blueberry compote and garnish with organic heavy whipped cream or whipped coconut cream. ENJOY!

Jgarza4178 you’re right! green bananas can be hard to find. You can try green banana flour. I would blend the eggs first. Gradually add flour until you have a pourable batter.
