Lectin Free Gourmet Pho

Pho is a Vietnamese soup that starts with a distinct broth made with aromatic spice like anise, cinnamon, clove, garlic and ginger. Then it’s all about the slurpy noodles and drop-ins. I had the honor of creating this recipe for our friends at Big Green Organic. My recipe is featured on the back of their purple sweet potato noodles. Lectin Free Pho Broth

Classic pho broth is simmered all day with a sachet of classic Vietnamese spices like cinnamon, anise, clove, garlic and ginger. My cheater method is perfect for those impatient types who want it now.


Purple Sweet Potato Noodles

Perhaps equally important to the aromatic broth are the pho noodles. Traditional pho noodles are made with wheat flour and egg and have a distinct crimp. For lectin free pho, we use delicious and gut-friendly purple sweet potato glass noodles. You can find them in most Asian markets. Drop-ins for LFG Pho

Now, let’s talk about the drop-ins for this soup. I like to keep it pretty simple with thinly sliced raw grassfed steak (the hot broth cooks til he beef), mushrooms, onions, microgreens and Thai basil. I also like to squeeze a lime wedge, and squirt a bit of sriracha sauce into the finished soup. And coconut aminos can double as a hoisin sauce to adjust the sweetness.

LFG 15-Minute Pho

1 package BGO Purple Sweet Potato Noodles

8 Cups Grassfed Beef Broth

1 Red Onion (thinly sliced)

1 Cinnamon Stick

1 Star Anise

1 Garlic Clove (smashed)

1-inch Slice Fresh Ginger (smashed)

4 Whole Cloves

1 Teaspoon Salt

1 Tablespoon Coconut Aminos

8 oz Grassfed Raw Steak (thinly sliced)


Drop-ins

Enoki Mushrooms

Radish Microgreens

Thai Basil

Lime Wedges

Sriracha Sauce


Step 1: Prepare Noodles

Cook noodles in boiling water for 6 minutes. Drain and rinse. Divide noodles into 4 soup bowls. Add thinly sliced raw steak and onions. Set aside.


Step 2: Simmer Broth

Into a stock pot add beef broth, cinnamon stick, star anise, garlic, ginger, cloves, salt and aminos. Simmer 15 minutes.


Step 3: Strain Boiling Broth Into Bowls

With a Pyrex fluid measuring cup, pour 2 cups hot pho broth through a screen strainer into each raw beef, onion and noodle bowl. The boiling broth will cook the beef and onions and reheat the noodles.


Step 4: Add Drop-Ins

Finally, artfully arrange mushrooms, radish microgreens, and Thai basil. Squeeze in a lime wedge, a little sriracha sauce and add more coconut aminos to taste.
