Lectin Free Bolognese

Ingredients (4 servings)
18 oz (about 2¼ cups) ground beef
2 cups chopped onions
1 teaspoon minced garlic
1–2 tablespoons balsamic vinegar
½ cup fresh basil, chopped
1 teaspoon dried oregano
Soup seasoning, to taste
¼ cup fresh parsley, chopped
¼ cup finely diced celery
1 cup finely diced carrots
½–1 cup water (as needed)
Preparation
Peel and finely chop the onions. Sauté them gently in ghee until translucent.
Peel and finely chop the garlic. Add it to the onions together with the ground beef and cook until the meat is well browned. Season with soup seasoning.
Add the finely diced vegetables, pour in a little water, and let the sauce simmer gently for about 1 hour, stirring occasionally.
Before serving, season with balsamic vinegar and fresh herbs.
Optional: For a creamier texture, stir in 1 tablespoon arrowroot flour and/or 2 tablespoons sheep’s curd at the end.
