Making lectin-free pasta and lasagna sheets from scratch is quick and easy. Fresh homemade lectin-free pasta allows full control over ingredients and its texture is superior—silky, tender, and better at absorbing sauces—resulting in richer flavor and a more satisfying bite. Homemade dough can be customized in thickness, shape, and flour choice, including gluten-free or lectin-free alternatives. Fresh pasta cooks faster and tastes noticeably fresher. Beyond taste, the process itself is quick, rewarding, encouraging creativity, tradition, and a deeper connection to food and cooking.
RECIPE
4 eggs depending on size
2 cups Lectin Free PASTA & NOODLES MIX
Optional: 1 tsp olive oil, melted sheep butter, melted tallow or melted ghee
INSTRUCTIONS (Manual)
Carefully knead together all ingredients to create a smooth dough
Let it rest for about 30 minutes
Use a little extra flour to cover your working surface
Take a piece of dough with about a 1-inch diameter and use a rolling pin (use extra flour as well) to make a thin pasta sheet
Now either use the entire sheets to make Lasagna or cut into slices to make Linguine
INSTRUCTIONS (Philips Pasta Maker)
Use the "egg based function"
Add 2 cups of Lectin Free PASTA & NOODLES MIX to the pasta maker
Add 2-3 eggs
Start the machine

TIPS
Lasagna sheets do not need to be boiled prior layering the lasagne
Thin pasta boils for approximately 2 minutes to be al dente
You may also form thicker noodles like gnocchi which need to boil for approximately 3-4 minutes
