LFG PANCAKE & WAFFLE MIX! The world's best lectin free pancake and waffle mix is now available a la carte. Make "pancake house" buttermilk pancakes (and waffles) with this easy mix. Just add a couple pantry staples and you've got fluffy, tasty hot cakes even the most finicky kids will gobble up. I love them with a pat of French butter and Lakanto maple syrup made with monk fruit. 


LFG pancakes are made with the goodness of a proprietary blend of cassava, blanched almond and coconut flours. Grassfed collagen gives them extra bounce, and flax meal provides healthy omega-3 fatty acids for your heart health. The hot cakes have a distinct subtly sweet vanilla flavor you'll crave. 


To make them, simply make an easy buttermilk with a2 or nut milk and vinegar. Then add a pastured egg and some olive oil. Whisk in mix to form a perfectly thick batter. Pour onto a medium hot skillet or waffle iron. Be patient! Slow and steady wins the race, so use a medium-low flame and give them about 3-5 minutes to cook on each side. Lectin free flours take a little longer to brown. 


To switch it up, try loading batter into a squeeze bottle and draw fun animal shapes for the kids. Mine love bunnies on Easter Sunday. Or add blueberries or chocolate chips to your pancakes or waffles for something extra special. 


For syrup, I use Lakanto maple flavored syrup. It can't be beat for real maple syrup taste without the sugar. You can also make a seasonal berry compote or apple cinnamon topping. Don't forget the whipped organic cream.
