When I set out to create this spring Foodie Box, I thought about all the seasonal tastes I've loved over the years. Spring means warmer days and longer nights, showers, flowers, being outside, gardening, and (of course) time with friends and family. So, Lectin Free Gourmet treats you to some gourmet foods that facilitate new energy and zest for life with lectin free love.


For starters, the pasta kit this season features organic 100% millet penne and a spring veggie mix with a savory olive oil sauce. The pasta kit whips up easy in one pan water and olive oil. Add wild-caught salmon for a boost of immunity and protein. The one-ingredient organic millet noodles are made by our friends at Big Green Organic.


Next, let's make a fancy carrot cake that will impress even your biggest food critics. It's easy with my three-part cake kit which comes complete with carrot cake mix, fruits and nuts, and frosting. You'll need your own eggs, water and olive oil to make this sophisticated cake.


Next is our delicious Greek dressing. This recipe has been in the original LFG ebook Swift & Stunning Plates for over six years, so it was high time to feature it in the box. Toss your peeled and deseeded tomatoes and cukes in this tangy, herby dressing.


And, what goes great with a Greek salad? How about a delicious spinach and artichoke flatbread to share? Just add water and a little olive oil to the flatbread mix. Rise, and divide the dough. Then press or roll into a giant flatbread or two smaller ones. Use the seasoned spinach artichoke mix and your own olive oil  to make a savory sauce to spread over the flat dough. Add your own goat cheese for the ultimate flatbread experience. Then top with your own fresh arugula. You can make these in your oven or on the grill.


If you’re a dunker, use the ranch dip to dunk your flatbread. The classic ranch dip mix has become a staple in the Lectin Free lineup. You get two packets of mix in the pillow box. Mix up one or two batches with your own organic sour cream or plant-based alternative. The dip is great with fresh veggie chips, sweet potato fries, and more.


And what’s spring without your first seasonal pie? I’ll make it easy with the world’s most perfect lectin free pie crust mix. Just add the fat and egg white and press it into a pie glass. Fill it with the coconut custard that you make with this seasonal box, or load your pie with fresh seasonal berries. It's up to you!


And this box just keeps going. Have you ever had Maui chip cookies? They are a tropical riff on the classic chocolate chip with toasty coconut, macadamia nuts and organic 72% cacao dark chocolate chips. Maui wowie!


That brings us to the very special drink of the season. Pink lemonade is so refreshing and chock full of healthy red polyphenols. This bright, tangy drink refreshes ‘til the last drop. We use non-GMO allulose and monk fruit to sweeten the drink just right. Just-add-water and ice.


Also, we include a kit to make the most amazing sweet and tropical coconut custard. This dreamy dessert is great on its own, or use it as the filling for your pie crust. The kit comes with two parts: custard mix and coconut. You’ll love this treat to remind you that tropical breezes are just around the corner. Just add your own coconut cream and omega-3 eggs.
